Best thing since sliced bread…

I could have come up with a shorter title for this post, but nothing else would have fit. I found this gem of a recipe here at Recipe’s Happen (great blog btw), and I couldn’t wait to make it. My baby had an infestation of the pink eye yesterday, so that meant no school, and no work. I hate calling off my big girl job, and between strep and now pink eye, it’s been too much in my opinion. He better stay healthy the rest of the year! Lol. Since I was stuck at home with el-sicko, I decided to make it. And OH. EM. GEE- was it good! It’s ‘officially’ called Bacon, Egg and Cheese Ring, and it was AH-mazing!  All you need is

1 can crescent rolls
5 eggs, scrambled
1 cup shredded cheese
8 slices cooked bacon

Preheat oven to 375. While that’s heating up, scramble the eggs, and cook the bacon (I totally cheated and used already cooked bacon). It’s pretty self explanatory just looking at the pictures on how to set it up:

Set up the crescent rolls to look like a sun

Add a slice of bacon to each ray

Add some shredded cheese in a ring like fashion

Add the scrambled eggs on top of the cheese

Add more shredded cheese on top of the eggs, and close it up!

Bake for 13-16 minutes, and out comes PERFECTION!

I’m sure you could substitute and add anything additional you wanted to. Elijah is having a birthday party tonight (don’t worry moms- he is no longer contagious! Lol) and is having a couple of the boys sleep over. He has already asked if I would make this tomorrow morning for his friends- I have a feeling we will be making this a lot in our house!!
